Hawaiian Delight: A Chilled Dessert

1 medium ripe banana, diced

1 cup crushed pineapple

2 tsp. sugar

1 tsp. grated orange zest

1 1/2 cups cooked and mashed butternut squash

1 1/2 cups whipped cream

 

In a large bowl, combine butternut squash, banana, pineapple, orange zest and sugar. Mix well.

 

Fold in 1 cup of the whipped cream.

 

Put into dessert cups and refrigerate 1 hour. Top with extra whipped cream before serving.

 

Yields 8—1/2 cup servings.
