Country Squash and Mushroom Meatloaf

2 cups of chopped butternut squash

1 cup of bread crumbs

1 egg

1 lb. of ground beef

1 cup of chopped mushrooms

1 packet of Lipton Onion and Mushroom Soup Mix

 

In a large mixing bowl, combine meat, soup mix, bread crumbs and egg. Mix together by hand until blended.

 

Mix in mushrooms and butternut squash.

 

Put mixture into loaf pan and bake at 350—375° for 1 hour. Cover with tin foil halfway through baking. Yields 1 8x4” loaf pan.
